Culinary students from Biloxi High Career Technology Center competed in the First Annual Mississippi ProStart Culinary Competition on February 9, 2010 at the Old Capitol Inn in Jackson, MS. ProStart is a curriculum that instructs students on how to become a restaurant and food service professional. Any student who successfully completes this program and the mentoring requirements of the NRA can take the National ProStart Certificate of Achievement exam. This is a national certification program recognized throughout the food service industry. This program was designed to articulate to postsecondary Food Production, Hotel and Restaurant Management, and Culinary Arts.

The winning menu contains: The appetizer was a spring mix salad with bleu cheese, pine nuts and grapefruit served with Sesame Dijon vinaigrette. They prepared an entrée that consisted of pan-seared butterfly salmon served over crimson lentils with sautéed asparagus and cherry tomatoes. The “homerun” of their menu was the Berry Tiramisu
