from Biloxi High Career Technology Center competed in the First Annual
Mississippi ProStart Culinary Competition on February
9, 2010 at the Old Capitol Inn in Jackson, MS.
ProStart is a curriculum that instructs
students on how to become a restaurant and food service professional. Any student who successfully completes this
program and the mentoring requirements of the NRA can take the National ProStart Certificate of Achievement exam. This is a national certification program
recognized throughout the food service industry. This program was designed to
articulate to postsecondary Food Production, Hotel and Restaurant Management,
and Culinary Arts.

The winning menu contains: The appetizer was a spring mix salad with bleu cheese, pine nuts and grapefruit served with Sesame Dijon vinaigrette. They prepared an entrée that consisted of pan-seared butterfly salmon served over crimson lentils with sautéed asparagus and cherry tomatoes. The “homerun” of their menu was the Berry Tiramisu
